Ingredients

Scale
  • 1 3/4 cups flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1 tsp pumpkin pie spice
  • 1/2 cup canola oil
  • 1/2 cup brown sugar (packed)
  • 1 egg
  • 6 oz pumpkin puree (plain canned)
  • 1/2 cup milk
  • 1 tsp vanilla extract
  • 1/2 stick butter (melted)
  • 1 cup sugar
  • 2 tsp cinnamon (for topping)
  • 1 tsp pumpkin spice (for topping)

Instructions

  1. Preheat oven to 350°F and grease a mini muffin pan with cooking spray.
  2. Whisk together flour, baking powder, salt, cinnamon, and pumpkin pie spice in a medium bowl until combined.
  3. In a large bowl, whisk canola oil, brown sugar, egg, pumpkin puree, and milk until smooth; stir wet ingredients into dry ingredients and mix just until no lumps remain.
  4. Fill each mini muffin cup to the top with batter and bake at 350°F for 10–12 minutes or until a toothpick inserted comes out clean. Bake additional batches as needed.
  5. While baking, melt the butter. In a separate bowl, mix sugar, cinnamon, and pumpkin spice to make cinnamon-sugar topping.
  6. Remove donut holes from pan and cool until warm. Dip or roll each in melted butter then coat all sides with cinnamon-sugar mixture.

Notes

Fill the mini muffin cups all the way to the top for dome shape and even baking., Avoid overbaking; 10-12 minutes is optimal for moist texture., Coat donut holes with cinnamon sugar when warm (not hot) to keep topping crisp., Add cinnamon sugar topping right before serving if storing to maintain texture., If batter is stiff, add milk one tablespoon at a time until scoopable., Use plain pumpkin puree, not pumpkin pie filling, for best consistency., Silicone mini muffin pans aid easy removal and cleanup, but greased metal pans work well too., Can be customized by swapping canola oil with melted butter or applesauce, and adding chocolate chips or pecans., Uncoated donut holes can be frozen and topped after thawing to keep cinnamon sugar crisp., Reheat gently in microwave or oven before coating with cinnamon sugar again.
