A refreshing summertime drink made with homemade peach syrup and black tea, served over ice. It tastes like fresh, real peaches and improves when chilled overnight.

  • 3 black tea bags
  • 4 cups boiling water
  • 3 large ripe peaches
  • 2 cups water
  • 1/3 cup granulated sugar (use 1/2 cup for a sweeter tea)

Instructions

  1. Bring 4 cups of water to a light simmer on the stove or in an electric kettle.
  2. Remove from heat, add the 3 black tea bags fully submerged and steep for 5 minutes; remove tea bags and let the tea cool completely, then chill in the fridge.
  3. Pit and roughly chop 3 large ripe peaches.
  4. In a blender, combine 1 cup water, 1/3 cup granulated sugar, and chopped peaches; pulse for 2-3 seconds just to break them down.
  5. Pour the peach mixture into a pot, add remaining 1 cup water, bring to a boil, then reduce to a simmer and cook for 5 minutes.
  6. Remove from heat and let it steep for 30 minutes.
  7. Strain the peach mixture through a fine-mesh sieve into a pitcher or jar, pressing to extract all the juice; chill the syrup about 30 minutes.
  8. Combine the chilled black tea and peach syrup in a large pitcher and stir to combine.
  9. Add ice, garnish with peach slices, and serve.

Use ripe, fragrant peaches for best flavor.
